Siobhán O’Sullivan

Owner / General Manager

Hospitality-focused, dedicated to excellence, and highly knowledgeable are just a few terms most often used to describe Siobhán. This Dublin native was immersed in her family’s hospitality and the food service industry from an early age. Her father was an energetic and successful restaurateur in Dublin who kept Siobhán engaged in the business throughout her youth. At home, her mother embodied hospitality and regularly hosted gatherings, where Siobhán absorbed the importance of making people feel welcome.

These two environments gave her the strength of character and strong desire to create warm, inviting atmospheres where people can relax and enjoy themselves.

Siobhán went on to build a career in hospitality, working in every restaurant position, from server and bartender to ultimately the role of general manager of the fine dining establishment The Metropolis in London. As a general manager, she took the business from a £1 million annual operation to £3 million. The pandemic pushed Siobhán to explore her skills as a restaurant entrepreneur, which ultimately led to the birth of Global Fusion


James D’Avray

Executive Chef

Having spent his childhood gardening and fishing in Suffolk, James found himself gravitating towards food from a young age. He landed his first restaurant job whilst at high school, cooking for Alta Rica protégé chef Andrew Waugh. This auspicious start to his career eventually led to principal roles within some of the most prominent kitchens in France and Italy. After returning to the UK in 2018 James opened his proprietary restaurant Global Fusion.

James brings an inspired and contemporary style to Global Fusion combining Modern European with Classic Cuisine from around the world.

James has a unique style, and is a passionate mentor to the young chefs under his wing. The menu at Global Fusion is a culmination of experience and flavors brought to life by Chef D’Avray to tell his story.

When James is not at the restaurant, he’s either pickling something, hanging with his family, or riding his bicycle all over the United Kingdom.
